• Miso, Tempeh, Natto & Other Tasty Ferments: A Step-by-Step Guide to Fermenting Grains and Beans

This in-depth handbook offers accessible, step-by-step techniques for fermenting beans and grains in the home kitchen. The authors expand beyond the basic components of traditionally Asian protein-rich ferments to include not only soybeans and wheat, but also chickpeas, black-eyed peas, lentils, barley, sorghum, millet, quinoa, and oats. Their ferments feature creative combinations such as ancient grains tempeh, hazelnut-cocoa nib tempeh, millet koji, sea island red pea miso, and heirloom cranberry bean miso. Once the ferments are mastered, there are more than 50 additional recipes for using them in condiments, dishes, and desserts (including natto polenta, Thai marinated tempeh, and chocolate miso babka).

Our 16 oz. flip top brown glass swing top bottles seal with a plastic, gasketed lid and a wire bale (included). They come 12 per case, and ship in a cardboard case with dividers.

    Why choose brown glass bottles?

The beer bottle glass color you choose for your homebrew will greatly impact its taste. Dark amber or brown glass greatly reduces UV light from spoiling the beer. Sure, any colored glass beer bottles filter out both visible and ultraviolet light. Brown glass blocks out more light than green, making it the optimal choice for bottling homebrew. Dark beers also absorb more light than light beers, making it essential to store stouts, bocks, and the like in brown bottles, while lighter beers can be stored in green bottles.

Since clear glass beer bottles don't block any light, they are the least desirable choice for long term beer storage, with the exception of any specific beverage whose color was the primary characteristic you were trying to stress, such as a red ale.

  • BRIX/SPECIFIC GRAVITY REFRACTOMETER W/ ATC

A refractometer instantly reads gravity, in Brix, of unfermented wort or fruit juice by measuring the degree that light passing through the sample is bent. Unlike a hydrometer, a refractometer requires only a few drops for a sample. To use, apply two to three drops to the prism face, close cover, and look through the eyepiece while aiming your refractometer at a light source.

The Specific Gravity scale will provide a quick reading of your Original Gravity. Once fermentation has begun and alcohol is present, keep track of the Brix scale and use a Refractometer Calculator for Final Gravity correction.

This is also a great tool for all-grain brewing. Easily sample your mash runoff so you know exactly when to stop sparging (typically 2 to 3 Brix). Then easily take readings before and during the boil to make sure you hit your recipe targets.

These refractometers measure from 0 to 32 degrees Brix, with an accuracy of +/- 0.2 degrees Brix. They also include automatic temperature compensation (ATC) for temperatures between 50 to 86 degrees Fahrenheit, which eliminates the need to consult temperature correction charts.
